I used to be a strawberry purist; simply eating them fresh with perhaps a little cream. That was until I tried Jane Baxter’s rhubarb + strawberry crumble. Watch the video to see how she does it.
I was sceptical when I saw this recipe in the Riverford Farm Cookbook. However, having some rhubarb and strawberries ready to use (and a husband who loves his crumbles!) I made this.
Admittedly I used my own topping recipe rather than the one in the book (will try that next time) but I have to say that I was certainly won-over to the idea of cooking strawberries. It wasn’t too sweet, but sweet enough to bring out all the flavours.
